I actually usually advise against making batter the night before for pancakes and waffles. The baking soda in the mix will activate when you mix the batter, releasing the gas that makes the pancakes fluffy. If you mix it up too far in advanced, the gas will all be released (and let out as soon as you touch the batter the next morning) which means the pancakes won’t be as fluffy.

I know that sounds super geeky, but basically what I’m saying is: if you mix the batter the night before, you risk losing fluffiness. It won’t be the end of the world… but you’ll lose fluffiness 🙂
